Stew pot vs stock pot: what's the difference?

Compared to a stew pot, a stock pot is generally as tall (or taller) as it is wide. Stew pots are generally wider and shallower, sometimes with sloping sides. This makes them ideal for slow cooking techniques, with the wider cooking surface designed to promote the evaporation of liquid. Many of the same dishes can be prepared in both stew pots and stock pots - but reserve your tall, straight-sided stock pot for liquid based recipes that require lots of simmering and boiling.
